Claims
- 1. A method of improving feel of a food or beverage during eating, said method comprising adding fucoidan derived from Kjellmaniella crassifolia to the food or beverage.
- 2. The method according to claim 1, wherein the food or beverage comprises flicoidan derived from Kjellmaniella crassifolia and substantially no algins.
- 3. The method according to claim 1, wherein the fucoidan is a fucoidan-containing extract.
- 4. The method according to claim 3, wherein the fucoidan-containing extract is extracted from Kjellmaniella crassifolia with a calcium salt.
- 5. The method according to claim 3, wherein the fucoidan-containing extract is extracted from Kjellmaniella crassifolia with an alkaline solution and a calcium salt.
- 6. The method according to claim 3, wherein the fucoidan-containing extract is extracted from Kjellmaniella crassifolia with an alkaline solution and acidification.
- 7. The method according to claim 1, wherein the fucoidan is prepared from Kjellmaniella crassifolia.
- 8. The method according to claim 1, wherein the fucoidan contains uronic acid and has a molecular weight which can be lowered by an endo-fucoidan-lyase produced by Flavobacterium sp. SA-0082 (FERM BP-5402) to produce one or more compounds having the following formulae (I), (II) or (III):
- 9. The method according to claim 1, wherein the fucoidan contains substantially no uronic acid, and has a molecular weight which cannot be substantially lowered by an endo-flicoidan-lyase produced by Flavobacterium sp. SA-0082 (FERM BP-5402).
- 10. The method according to claim 1, wherein the fucoidan is degraded.
- 11. The method according to claim 1, wherein the amount of flicoidan calculated as flicose is 0.001 w/w % or more.
- 12. The method according to claim 1, wherein the amount of fucoidan is 10-200 mg w/v %.
- 13. The method according to claim 1, wherein the food or beverage further comprises algins and wherein the weight percentage of fucoidan to that of algins and fucoidan is 27% or more.
