Claims
- 1. A method for preparing a substantially fat-free processed cheese product comprising the steps of blending comminuted natural skim milk cheese comprising from about 50 to about 60 weight percent water, less than about 1.67 weight percent fat and from about 40 to about 50 weight percent solids not fat, nonfat dairy solids, an aqueous slurry of porous, particulate, microreticulated microcrystalline cellulose comprising from about 5 to about 12 weight percent of microreticulated microcrystalline cellulose solids, low DE corn syrup solids, an anionic hydrophilic gum component and emulsifying salts to provide a substantially fat-free processed cheese blend,
- said microreticulated microcrystalline cellulose being prepared by the steps of heating and repeatedly shearing at least two times an aqueous dispersion comprising from about 5 to about 12 weight percent of microcrystalline cellulose and from about 88 to about 95 weight percent water in a high shear zone having a pressure drop of at least 12,000 psi to fragment the microcrystalline cellulose fragments and reagglomerating the crystalline cellulose fragments under high shear conditions to produce an aqueous dispersion of porous, microreticulated microcrystalline particles having a void volume at least about 25 volume percent, a particle size in the range of from about 5 to about 20 microns, and having a mean particle size in the range of from about 5 to about 20 microns.
- heating the cheese blend to a processing temperature in the range of from about 165.degree. F. to about 270.degree. F., with mixing, to provide a substantially homogenized fluidized cheese melt,
- maintaining the substantially homogeneous fluidized cheese melt at said high processing temperature for at least about 85 seconds at 220.degree. F. or equivalent time-temperature relationship, to provide a high temperature processed cheese melt,
- cooling the high temperature processed cheese melt to a temperature in the range of from about 140.degree. F., to about 170.degree. F., and
- packaging the cooled cheese melt to provide a packaged, substantially fat-free processed cheese product having less than 1.67 weight percent fat and desirable fat mimetic characteristics.
- 2. A substantially fat-free processed cheese product having fat-mimetic characteristics comprising a substantially homogeneous mixture of from about 18 to about 28 weight percent of natural high moisture skim milk cheese on a solids basis, from about 0.25 percent to about 2 weight percent of dispersed, porous, particulate, microreticulated microcrystalline cellulose on a solids basis, from about 53 to about 65 weight percent of water, from about 2 to about 5 weight percent of low DE corn syrup solids, from about 0.25 to about 0.75 weight percent of a polyanionic gum component from about 0.5 to about 2.5 weight percent of emulsifier salts, from about 10 to about 15 weight percent of dairy solids and less than about 1 weight percent of digestible triglycerides, said microreticulated microcrystalline cellulose being prepared by the steps of heating and repeatedly shearing at least two times an aqueous dispersion comprising from about 5 to about 12 weight percent of microcrystalline cellulose and from about 88 to about 95 weight percent water in a high shear zone having a pressure drop of at least 12,000 psi to fragment the microcrystalline cellulose fragments and reagglomerating the crystalline cellulose fragments under high shear conditions to produce an aqueous dispersion of porous, microreticulated microcrystalline particles having a void volume at least about 25 volume percent, a particle size in the range of from about 5 to about 20 microns, and having a mean particle size in the range of from about 5 to about 20 microns.
- 3. A method in accordance with claim 1 wherein said heating is effected by injecting steam into said cheese blend.
- 4. A method in accordance with claim 3 wherein said steam is injected at a level of from about 6 to about 17 percent by weight, based on the total weight of the cheese blend.
- 5. A method in accordance with claim 1 wherein said cheese blend also includes a titanium dioxide opacifying agent.
- 6. A method in accordance with claim 1 wherein said low DE corn syrup solids has a DE of from about 15 to about 28.
- 7. A method in accordance with claim 1 wherein said cooling is effected by flash cooling the high temperature processed cheese melt by discharging the cheese melt into a vacuum zone maintained at a pressure of less than about 30 inches of mercury.
- 8. A cheese product in accordance with claim 2 wherein said low DE corn syrup solids has a DE of from about 15 to about 28.
- 9. A cheese product in accordance with claim 2 which also comprises from about 0.5 to about 0.25 weight percent of titanium dioxide.

This application is a continuation of application Ser. No. 462,606 filed Jan. 9, 1990 now abandoned, which is a continuation-in-part of U.S. patent application Ser. No. 395,800, filed Aug. 18, 1989, now U.S. Pat. No. 5,011,701, entitled "Low Calorie Food Products Having Smooth, Creamy, Organoleptic Characteristics", which is incorporated by reference herein.
