Claims
- 1. Perfumes and flavors comprising a reaction product of an organoleptically acceptable aldehyde and an amine which does not distort the sensory characteristics of the perfumes and flavors, wherein the aldehyde is chosen from:
- i) Alkanals of types:
- a) CH.sub.3 (CH.sub.2).sub.n CHO where n is 0 to 14 and the chain may be straight. branched or cyclic
- b) CH.sub.3 (CH.sub.2 CH.sub.3 (CH.sub.2).sub.n CHO m+n is 0 to 8
- ii) Unsaturated aldehydes of types:
- a) CH.sub.2 .dbd.CH(CH.sub.2).sub.n CHO where n is 6 to 9
- b) CH.sub.3 (CH.sub.2).sub.m CH.dbd.CH(CH.sub.2).sub.n CHO m+n is 2 to 8
- c) Citronellal
- d) Phenylpropanals: R"PhCH.sub.2 CH(R')CHO R'is H or CH.sub.3 R"is H. isopropyl, tert-butyl
- e) Phenylacetaldehydes: PhCH(R) CHO R is H or CH.sub.3
- f) Cyclohexene carboxaldehydes: ##STR5## R, R', R" are each H or CH.sub.3 g) Cinnamic aldehydes: PhCH.dbd.CH(R)CHO R.dbd.H CH.sub.3, pentyl, hexyl
- h) Benzaldehydes: RPhCHO R is H, isopropyl, OCH.sub.3 or tertbutyl
- i) Hydroxy derivatives of a) to h);
- and the amine is chosen from:
- i) Aminoalkanes of general formula:
- R NH.sub.2 Where R is �Cl! C.sub.1 to C.sub.16 alkyl, aryl or aralkyl,
- ii) Diaminoalkanes of general formula:
- H.sub.2 N (C.sub.11 H.sub.20) NH.sub.2 Where (C.sub.8 H.sub.20) includes linear and branched chains and n is a maximum of 10,
- iii) Alkanolamines of general formula:
- (NH.sub.2) (C.sub.8 H.sub.20) (OH), where n is a maximum of 10, and their alkyl and (poly)oxyethylene ether derivatives,
- Phosphatidylethanolamines of the type: ##STR6## R', R" are each fatty acid alkyl residues containing at least 12 carbon atoms,
- iv) Alpha-amino acid esters of the type:
- H.sub.2 NCH(R") CO2R'
- R' is CH.sub.3, Ph, PhCH.sub.2, C.sub.2 to C.sub.4 straight and branched alkyl groups,
- R" is H, CH.sub.3 CH.sub.2, CH.sub.3 CH.sub.2 CH(CH.sub.3), (CH.sub.3).sub.2 CHCH.sub.2, H.sub.2 NCO, HSCH.sub.2, RO.sub.2 CCH.sub.2 CH.sub.2, CH.sub.3 SCH.sub.2 CH.sub.2, HOCH.sub.2, (CH.sub.3).sub.2 CH, PhCH.sub.2, p-hydroxyphenylmethyl,
- v) Beta-, or gamma-amino acid esters of general formula:
- H.sub.2 N(CH.sub.2).sub.n CO.sub.2 R n is 2 or 3, R is CH.sub.3, Ph, PhCH.sub.2, C.sub.2 to C.sub.4 straight and branched alkyl groups.
