Claims
- 1. An oven for controlling the temperature and surface texture of a food product comprising: a cabinet; perforated dividing means in said cabinet dividing the interior of the cabinet into a cooking chamber and an air heating chamber; circulating means in said air heating chamber to draw air through said perforated dividing means and dispensing air from said air heating chamber into said cooking chamber; heater means in said air heating chamber between said perforated dividing means and said air circulating means; microwave heating means communicating with said cooking chamber, said perforated dividing means preventing transfer of microwave energy from said cooking chamber to said air heating chamber; and means positioning said heater means whereby the temperature of said air circulating means is greater than the temperature of said perforated dividing means.
- 2. An oven for controlling the temperature and surface texture of a food product comprising: a cabinet; perforated dividing means in said cabinet dividing the interior of the cabinet into a cooking chamber and an air heating chamber; circulating means in said air heating chamber to draw air through said perforated dividing means; a duct formed by a perforated plate having an array of passages formed therein for dispensing air from said air heating chamber into said cooking chamber; an array of tubes secured to said perforated plate for receiving air flowing through said passages; means pivotally mounting said duct in said cabinet for reciprocal movement of said tubes; heater means in said air heating chamber between said perforated dividing means and said circulating means; microwave heating means communicating with said cooking chamber, said perforated dividing means being adapted to prevent transfer of microwave energy from said cooking chamber to said heating chamber; and means positioning said heater means whereby the temperature of said circulating means is greater than the temperature of said perforated dividing means.
- 3. An oven according to claim 2, with the addition of: a plurality of air directing vanes in said duct, said vanes being configured to direct air through said passages and into said tubes.
- 4. An oven according to claim 2, said duct being formed of microwave reflective material which stirs the microwave energy in the cooking chamber as it oscillates.
- 5. An oven for controlling the temperature and surface texture of food product comprising: a cabinet; a perforated dividing plate in said cabinet dividing the interior of the cabinet into a cooking chamber and an air heating chamber; circulating means in said air heating chamber for drawing air through said perforated dividing plate and for dispensing air from said air heating chamber into said cooking chamber; heater means in said air heating chamber between said perforated dividing plate and said circulating means; microwave heating means communicating with said cooking chamber, said perforated dividing plate being constructed of metallic material having perforations with relatively small openings equivalent to more than 50% of the surface area of the plate, said plate being configured to prevent microwave energy from passing from said cooking chamber into said air heating chamber; and means positioning said heater means whereby the temperature of said circulating means is greater than the temperature of said perforated dividing plate.
- 6. An oven for controlling the temperature and surface texture of a food product comprising:
- a cabinet having an interior;
- microwave heating means communicating with the interior of said cabinet;
- a perforated plate mounted in said cabinet for dividing the interior of the cabinet into an air conditioning chamber and a cooking chamber;
- blower means in said air conditioning chamber, said blower means drawing air from said cooking chamber through said perforated plate and dispensing air from said air conditioning chamber into said cooking chamber, said perforated plate having small openings configured to prevent passage of microwave energy from said cooking chamber into said air conditioning chamber; and
- heating means in said air conditioning chamber positioned to heat air flowing through said perforated plate in a recirculating path to said cooking chamber.
- 7. An oven for controlling the temperature and surface texture of a food product according to claim 6 said perforated plate having spaced openings.
- 8. An oven for controlling the temperature and surface texture of a food product according to claim 7, said spaced openings in said perforated plate extending through more than fifty percent of the surface area of said plate.
- 9. An oven for controlling the temperature and surface texture of a food product according to claim 6, said perforated plate being maintained at a temperature for causing smoke-type particles in the air to be deposited on the surface in the recirculating path.
- 10. An oven for controlling the temperature and surface texture of a food product according to claim 6, said heating means comprising: an electric heating element mounted adjacent said blower means.
- 11. An oven for controlling the temperature and surface texture of a food product according to claim 6, said blower means comprising: a blower housing in said air conditioning chamber, said blower housing having an inlet and a discharge passage.
- 12. An oven for controlling the temperature and surface texture of a food product according to claim 11, said heating means comprising: a first stage of coils mounted in said air conditioning chamber outside of the blower housing; and a second stage of coils mounted inside said blower housing.
- 13. An oven for controlling the temperature and surface texture of a food product according to claim 11, said blower means further comprising: dispensing means mounted in said cooking chamber and communicating with said discharge passage.
- 14. An oven for controlling the temperature and surface texture of a food product according to claim 13, with the addition of: means movably securing said dispensing means in said cooking chamber.
- 15. An oven for controlling the temperature and surface texture of a food product according to claim 14, said dispensing means having microwave reflective surfaces which serve as stirrers to help distribute the microwave energy in the cooking chamber.
- 16. An oven for controlling the temperature and surface texture of a food product according to claim 14, said dispensing means further comprising: a plenum communicating with said discharge passage; a duct communicating with said plenum; and air directing vanes in said duct for distributing air along said duct.
- 17. An oven for controlling the temperature and surface texture of a food product according to claim 16, said duct comprising: means forming spaced orifices adapted to dispense a plurality of air flow streams into said cooking chamber; and means moving said duct whereby at least one of said air flow streams is directly induced adjacent the surface of the food product.
- 18. An oven for controlling the temperature and surface texture of a food product according to claim 6, with the addition of means radiating microwave energy into said cooking chamber through a wave guide inclined at an angle between 15.degree. and 75.degree. from a plane extending perpendicular to said perforated plate.
- 19. An oven for controlling the temperature and surface texture of a food product comprising: a cabinet having an interior; perforated dividing means for dividing the interior of the cabinet into a cooking chamber and an air heating chamber, said perforate dividing means for preventing transfer of microwave energy from said cooking chamber to said air heating chamber; means for delivering microwave energy into said cooking chamber; air dispensing duct in said cooking chamber, said air dispensing duct having microwave reflective surfaces; means for moving said air dispensing duct whereby said microwave reflective surfaces thereon stir the microwave energy in the cooking chamber; air circulating means in said air heating chamber to draw air through said perforated dividing means and to deliver air to said air dispensing duct; heater means in said air heating chamber between said perforated dividing means and said air dispensing duct for controlling temperature of air dispensed into said cooking chamber.
