Claims
- 1. A method for lyophilizing a food which comprises adding Xanthomonas campestris FERM BP-4191 to a food, freezing the food, and vaporizing moisture from the frozen food to effect drying.
- 2. The method according to claim 1, wherein the food is selected from the group consisting of fruit juices, tea extracts, coffee, soy sauce, sauces, drippings, soups, fermented soy bean paste, and agar.
