Claims
- 1. A method for reducing the allergenicity of a food that comprises wine, comprising:treating the food comprising wine with super critical fluid or critical liquid carbon dioxide or nitrogen.
- 2. A method for reducing the allergenicity of a food that comprises fat, comprising:treating the food with super critical fluid or critical liquid carbon dioxide or nitrogen; and wherein the fat is not removed from the treated food.
- 3. A method for reducing the allergenicity of a food that comprises peanut flour, comprising:treating the food comprising peanut flour with supercritical fluid or critical liquid carbon dioxide or nitrogen; and whereby the flour is so degraded by the treatment that there is an at least about 50% reduction in the particle size of the flour.
- 4. The method of claim 3 wherein there is an at least about 65% reduction in the particle size of the flour.
- 5. A method for reducing the allergenicity of a food that comprises at least partially defatted peanut flour, comprising:treating the food comprising peanut with super critical fluid or critical liquid carbon dioxide or nitrogen.
- 6. A method for reducing the allergenicity of a food that comprises starch, comprising:treating the food with super critical fluid or critical liquid carbon dioxide or nitrogen; and whereby the starch is so degraded by the treatment that there is an essential absence of birefringent starch granules upon polarizing microscopic examination.
- 7. A method for reducing the allergenicity of a food that comprises chopped peanuts, peanut flour, or peanut paste, comprising:treating the food comprising chopped peanuts, peanut flour, or peanut paste with supercritical fluid or critical liquid carbon dioxide or nitrogen; wherein peanut allergens as measured using ELISA or RIA are decreased at least about 10-fold after treatment.
- 8. The method of claim 7 wherein peanut allergens are decreased at least about 100-fold after treatment.
- 9. The method of claim 8 wherein peanut allergens are decreased at least about 285-fold after treatment.
- 10. A method for reducing the alleruenicity of a food, comprising treating the food with supercritical fluid or critical liquid carbon dioxide or nitrogen for a period of at least 15 minutes.
- 11. A method according to claim 10, comprising so treating the food for a period in the range of from 15 to 30 minutes.
- 12. A method for reducing the allergenicity of a food that comprises wine, comprising:altering the three-dimensional structure of an allergenic component of the food that comprises wine by treating the food with super critical fluid or critical liquid carbon dioxide or nitrogen.
- 13. The method of claim 10 wherein the food comprises fat and wherein the fat is not removed from the treated food.
- 14. A method for reducing the allergenicity of a food that comprises peanut flour, comprising:altering the three-dimensional structure of an allergenic component of the food by treating the food with super critical fluid or critical liquid carbon dioxide or nitrogen and whereby the flour is so degraded by the treatment that there is an at least about 50% reduction in the particle size of the flour.
- 15. The method of claim 14 wherein there is an at least about 65% reduction in the particle size of the flour.
