Claims
- 1. A recrystallized sugar product prepared by a process comprising:
- blending a powdered sugar with up to about 15 percent of an adjuvant to provide a sugar blend, said sugar blend has up to about 3 percent moisture;
- feeding said sugar blend under a positive pressure to an extruding means; and
- mixing with a high shear extruding means said sugar blend at a temperature between about 220.degree. F. and about 300.degree. F. with a residence time in said extruding means of between about 0.5 and about 12 seconds and with a discharge pressure between 20 and 1,200 psi;
- whereby said adjuvant is uniformly distributed throughout said sugar blend.
- 2. The product of claim 1 wherein said powdered sugar is refined white sucrose.
- 3. The product of claim 1 wherein said powdered sugar has a granule size distribution such that at least about 50 percent passes through a 200 mesh screen, at least about 70 percent passes through a 150 mesh screen, and at least about 85 percent passes through a 100 mesh screen.
- 4. The product of claim 3 wherein said powdered sugar has a granule size distribution such that at least about 99 percent passes through a 325 mesh screen.
- 5. The product of claim 1 wherein said sugar blend has a total moisture content less than about 2.75 percent.
- 6. The product of claim 5 wherein said sugar blend has a total moisture content less than about 2.5 percent.
- 7. The product of claim 1 wherein said adjuvant is a member selected from the group consisting of sucrose, invert syrup, honey, maple syrup, malt extract, sweet sorghum syrup, sugar cane juice concentrate, sugar beet juice concentrate, fruit juice concentrate, refiner's syrup, molasses, and mixtures of these.
- 8. The product of claim 1 wherein said adjuvant is a starch conversion product being a member selected from the group consisting of maltodextrins, regular corn syrups, high fructose corn syrups, dextrose, fructose, and mixtures of these.
- 9. The product of claim 1 wherein said adjuvant is a polyol being a member selected from the group consisting of glycerine, xylitol, mannose, sorbitol, mannitol, hydrogenated conversion products, and mixtures of these.
- 10. The product of claim 1 wherein said adjuvant is an additive being a member selected from the group consisting of an artificial flavor or color, a natural flavor or color, a botanical flavor extractive, a high-intensity sweetener, a pharmaceutical, a gum, a hydrocolloid, and mixtures of these.
- 11. The product of claim 1 wherein said process further comprises the step of spraying an atomized liquid adjuvant onto said powdered sugar to form said sugar blend.
- 12. The product of claim 1 wherein said process further comprises the step of maintaining a vacuum at said exit of said extruding means to enhance dehydration of said extruded sugar blend.
- 13. A recrystallized sugar product prepared by a process comprising:
- admixing a first quantity of a powdered sugar and a second quantity of an invert sugar to provide a sugar blend, said sugar blend has up to about three percent moisture;
- feeding said sugar blend under a positive pressure to an extruding means; and
- mixing with a high shear extruding means at about 100 to about 500 RPM said sugar blend to a temperature between about 220.degree. F. and about 300.degree. F. with a residence time in said extruding means of between about 0.5 and about 12 seconds to simultaneously dehydrate and recrystallize said sugar blend upon exiting said extruding means;
- whereby said adjuvant is uniformly distributed throughout said sugar blend.
- 14. The product of claim 13 wherein said powdered sugar is refined white sucrose.
- 15. The product of claim 13 wherein said powdered sugar has a granule size distribution such that at least about 50 percent passes through a 200 mesh screen, at least about 70 percent passes through a 150 mesh screen, and at least about 85 percent passes through a 100 mesh screen.
- 16. The product of claim 15 wherein said powdered sugar has a granule size distribution such that at least about 99 percent passes through a 325 mesh screen.
- 17. The product of claim 13 wherein said sugar blend has a total moisture content less than about 2.75 percent.
- 18. The product of claim 17 wherein said sugar blend has a total moisture content less than about 2.5 percent.
- 19. The product of claim 13 wherein said adjuvant is a member selected from the group consisting of sucrose, invert syrup, honey, maple syrup, malt extract, sweet sorghum syrup, sugar cane juice concentrate, sugar beet juice concentrate, fruit juice concentrate, refiners syrup, molasses, and mixtures of these.
- 20. The product of claim 13 wherein said adjuvant is a starch conversion product, being a member selected from the group consisting of maltodextrins, regular corn syrups, high fructose corn syrups, dextrose, fructose, and mixtures of these.
- 21. The product of claim 13 wherein said adjuvant is a polyol being a member selected from the group consisting of glycerine, xylitol, mannose, sorbitol, mannitol, hydrogenated conversion products, and mixtures of these.
- 22. The product of claim 13 wherein said adjuvant is an additive, said additive being a member selected from the group consisting of an artificial flavor or color, a natural flavor or color, a botanical flavor extractive, a high-intensity sweetener, a pharmaceutical, a gum, a hydrocolloid, and mixtures of these.
- 23. The product of claim 13 wherein said process further comprises the step of spraying an atomized liquid adjuvant onto said blended powdered sugar to form said sugar blend.
- 24. The product of claim 13 wherein said process further comprises the step of maintaining a vacuum at said exit of said extruding means to enhance dehydration of said extruded sugar blend.
- 25. A recrystallized sugar product with nonsucrose solids prepared by a process comprising:
- blending
- (a) a refined white sucrose fondant, said refined white sucrose fondant has a granule size distribution such that at least 99 percent passes through a 325 mesh screen, and
- (b) an adjuvant, said adjuvant includes a nonsucrose solid,
- said blend of said refined white sucrose fondant and adjuvant has up to about three percent moisture and up to 15 percent nonsucrose solids on a dry solids basis; feeding said sugar blend under a positive pressure to a cooker-extruder means; and
- extruding said sugar blend to a temperature between about 220.degree. F. and 300.degree. F. with residence time in said cooker-extruder means, having a length to diameter ratio of at least 6.5, of between about 0.5 and about 12 seconds and with a discharge pressure between 20 and 1,200 psi;
- whereby said adjuvant is uniformly distributed throughout said sugar blend.
- 26. The product of claim 25 wherein said process further comprises the step of spraying an atomized liquid adjuvant onto said blended fondant sugar to form said sugar blend.
