Claims
- 1. A reduced calorie fat composition which comprises:
- a. from about 10 to about 65% by weight of an edible, substantially nonabsorbable, substantially nondigestible polyol fatty acid polyester having at least 4 fatty acid ester groups, wherein said polyol is selected from the group consisting of sugars and sugar alcohols containing from 4 to 8 hydroxy groups and wherein each fatty acid group has from 2 to 24 carbon atoms; and
- b. from about 35 to about 90% reduced calorie triglycerides selected from the group consisting of MMM, MLM, MML, LLM, LML and LLL triglycerides, and mixtures thereof; wherein M is a saturated fatty acid residue selected from the group consisting of C.sub.6 to C.sub.10 saturated fatty acids, and mixtures thereof; wherein L is a saturated fatty acid residue selected from the group consisting of C.sub.20 to C.sub.24 saturated fatty acids and mixtures of C.sub.18 to C.sub.24 saturated fatty acids; wherein said reduced calorie triglycerides comprise: (1) at least about 85% combined MLM, MML, LLM and LML triglycerides; and (2) up to about 15% combined MMM and LLL triglycerides, and wherein said fatty acid composition of the reduced calorie triglycerides comprises: (1) from about 10 to about 70% C.sub.6 to C.sub.10 saturated fatty acids, (2) from about 30 to about 90% C.sub.18 to C.sub.24 saturated fatty acids; and (3) from about 20% to about 80% C.sub.20 to C.sub.24 saturated fatty acids.
- 2. The composition of claim 1 wherein said polyol polyester is liquid at 98.6.degree. (37.degree. C.).
- 3. The composition of claim 2 wherein said polyol is sucrose.
- 4. The composition of claim 3 wherein each fatty acid group is said polyol polyester has from 8 to 22 carbon atoms.
- 5. The composition of claim 4 wherein the fatty acid groups in said polyol polyester are formed predominantly from the fatty acids of oleic acid, linoleic acid and mixtures thereof.
- 6. The composition of claim 2 wherein said reduced calorie triglycerides comprise at least about 90% combined MLM, MML, LLM, and LML triglycerides and up to about 10% combined MMM and LLL triglycerides.
- 7. The composition of claim 6 wherein the fatty acid composition of said reduced calorie triglycerides comprises from about 20 to about 60% C.sub.6 to C.sub.10 saturated fatty acids, from about 40 to about 80% C.sub.18 to C.sub.24 saturated fatty acids, and from about 30 to about 70% C.sub.20 to C.sub.24 saturated fatty acids.
- 8. The composition of claim 7 wherein said liquid polyol polyester comprises from about 10 to about 40% of the composition and wherein said reduced calorie triglycerides comprise from about 60 to about 90% of the composition.
- 9. The composition of claim 1 wherein said reduced calorie triglycerides comprise of least about 80% C.sub.38 to C.sub.42 triglycerides, from about 40 to about 50% C.sub.8 to C.sub.10 saturated fatty acids and from about 40 to about 60% behenic acid.
- 10. The composition of claim 9 wherein said reduced calorie triglycerides comprise at least about 80% C.sub.34 to C.sub.42 triglycerides, from about 40 to about 50% C.sub.8 to C.sub.10 saturated fatty acids and from about 40 to about 60% combined stearic and behenic acid.
- 11. The composition of claim 1 which further comprises from about 0.05 to about 0.2% of a calcium soap or magnesium soap of behenic acid or stearic acid.
- 12. A fat-containing food product having fat ingredients and nonfat ingredients wherein from about 10 to 100% of the total fat comprises the reduced calorie fat composition of claim 1.
- 13. The food product of claim 12 which is a firm chocolate-flavored product and wherein the reduced calorie fat composition comprises from about 40 to about 60% of a solid sucrose octaester having C.sub.12 to C.sub.14 fatty acid groups and from about 40 to about 60% of said reduced calorie triglycerides.
- 14. The chocolate-flavored product of claim 13 wherein the reduced calorie fat composition comprises from about 45 to about 55% of a sucrose octaester having at least about 90% myristic acid groups and from about 45 to about 55% of said reduced calorie triglycerides having at least about 80% C.sub.38 to C.sub.42 triglycerides, from about 40 to about 50% C.sub.8 to C.sub.10 saturated fatty acids and from about 40 to about behenic acid.
- 15. The composition of claim 1 wherein the fatty acid composition of said reduced calorie triglycerides comprises no more than about 6% C.sub.18 unsaturated fatty acids.
- 16. A frying oil wherein the fat ingredients comprise from about 75 to 100% of a reduced calorie fat composition which comprises:
- a. from about 35 to about 65% by weight of an edible, substantially nonabsorbable, substantially nondigestible polyol fatty acid polyester having at least 4 fatty acid ester groups, wherein said polyol is selected from the group consisting of sugars and sugar alcohols containing from 4 to 8 hydroxy groups and wherein each fatty acid group has from 2 to 24 carbon atoms; and
- b. from about 35 to about 65% reduced calorie triglycerides selected from the group consisting of MMM, MLM, MML, LLM, LML and LLL triglycerides, and mixtures thereof; wherein M is a saturated fatty acid residue selected from the group consisting of C6 to C10 saturated fatty acids, and mixtures thereof; wherein L is a saturated fatty acid residue selected from the group consisting C20 to C24 saturated fatty acids, and mixtures of C18 to C24 saturated fatty acids; wherein said reduced calorie triglycerides comprise: (1) at least about 85% combined MLM, MML, LLM and LML triglycerides; and (2) up to about 15% combined MMM and LLL triglycerides, and wherein said fatty acid composition of the reduced calorie triglycerides comprises: (1) from about 10 to about 70% C6 to C10 saturated fatty acids; (2) from about 30 to about 90% C18 to C24 saturated fatty acids; and (3) from about 20% to about 80% C20 to C24 saturated fatty acids; and from 0 to about 25% digestible triglyceride oil.
- 17. The frying oil of claim 16 wherein said polyol polyester is liquid at 100.degree. F. (37.8.degree. C.).
- 18. A salted snack which has been fried in the frying oil of claim 16.
- 19. The salted snack of claim 18 which is a french fry or potato chip.
- 20. A cooking and salad oil which is clear at about 70.degree. F. (21.1.degree. C.) and which comprises:
- a. from about 2 to about 15% by weight of an edible, substantially nonabsorbable, substantially nondigestible liquid polyol fatty acid polyester having at least 4 fatty acid ester groups, wherein said polyol is selected from the group consisting of sugars and sugar alcohols containing from 4 to 8 hydroxy groups and wherein each fatty acid ! group has from 8 to 22 carbon atoms;
- b. from about 5 to about 25% reduced calorie triglycerides selected from the group consisting of MMM, MLM, MML, LLM, LML and LLL triglycerides, and mixtures thereof; wherein M is a saturated fatty acid residue selected from the group consisting of C.sub.6 to C.sub.10 saturated fatty acids, and mixtures thereof; wherein L is a saturated fatty acid residue selected from the group consisting of C.sub.18 to C.sub.24 saturated fatty acids, and mixtures thereof; wherein said reduced calorie triglycerides comprise (1) at least about 80% combined MLM and MML triglycerides;
- c. from about 60 to about 90% of a digestible triglyceride oil;
- d. the ratio of said liquid polyol polyester to said reduced triglycerides being from about 10:90 to about 40:60.
- 21. The oil of claim 20 which comprises from about 4 to about 12% of said liquid polyol polyester, from about 8 to about 20% of said reduced calorie triglycerides, and from about 68 to about 88% of said digestible oil.
- 22. The oil of claim 21 wherein said reduced calorie triglycerides comprise at least about 90% combined MLM and MML triglycerides, no more than about 6% combined LLM and LML triglycerides, no more than about 3% MMM triglycerides, and no more than about 1% LLL triglycerides.
- 23. The oil of claim 22 wherein said reduced calorie triglycerides have a fatty acid composition comprising from about 40 to about 50% C.sub.8 to C.sub.10 saturated fatty acids, from about 10 to about 30% stearic acid, from about 20 to about 40% behenic acid and no more than about 8% combined C.sub.20 and C.sub.24 saturated fatty acids.
- 24. The oil of claim 24 wherein said digestible oil is selected from the group consisting of soybean oil, safflower oil, sunflower oil, canola oil and blends thereof.
- 25. A reduced calorie fat composition which comprises:
- a. from about 10 to about 65% by weight of an edible, substantially nonabsorbable, substantially nondigestible polyol fatty acid polyester having at least 4 fatty acid ester groups, wherein said polyol is selected from the group consisting of sugars and sugar alcohols containing from 4 to 8 hydroxy groups and wherein each fatty acid group has from 2 to 24 carbon atoms; and
- b. from about 35 to about 90% reduced calorie triglycerides selected from the group consisting of MMM, MLM, MML, LLM, LML and LLL triglycerides, and mixtures thereof; wherein M is a saturated fatty acid residue selected from the group consisting of C6 to C10 saturated fatty acids, and mixtures thereof; whereon L is a saturated fatty acid residue selected from the group consisting of C18 to C24 saturated fatty acids, and mixtures thereof; wherein said reduced calorie triglycerides comprise: (1) at least about 85% combined MLM, MML, LLM and LML triglycerides; and (2) up to about 15% combined MMM and LLL triglycerides, and wherein the fatty acid composition of the reduced calorie triglycerides comprises: (1) from about 10 to about 70% C6 to C10 saturated fatty acids; (2) from about 30 to about 90% C18 to C24 saturated fatty acids; and (3) no more than about 6% C18 unsaturated fatty acids.
- 26. The composition of claim 25 wherein the fatty acid composition of said reduced calorie triglycerides comprises from about 10 to about 30% stearic acid.
- 27. The composition of claim 25 wherein said reduced calorie triglycerides comprise at least about 80% C.sub.34 to C.sub.38 triglycerides, from about 40 to about 50% C.sub.8 to C.sub.10 saturated fatty acids and from about 35 to about 50% stearic acid.
- 28. A reduced calorie fat composition which comprises:
- a. from about 65 to about 95% by weight of an edible, substantially nonabsorbable, substantially nondigestible polyol fatty acid polyester having at least 4 fatty acid ester groups, wherein said polyol is selected from the group consisting of sugars and sugar alcohols containing from 4 to 8 hydroxy groups and wherein each fatty acid group has from 2 to 24 carbon atoms; and
- b. from about 5% to about 35% reduced calorie triglycerides selected from the group consisting of MMM, MLM, MML, LLM, LML and LLL triglycerides, and mixtures thereof; wherein M is a saturated fatty acid residue selected from the group consisting of C6 to C10 saturated fatty acids, and mixtures thereof; wherein L is a saturated fatty acid residue selected from the group consisting of C20 to C24 saturated fatty acids, and mixtures of C18 to C24 saturated fatty acids; wherein said reduced calorie triglycerides comprise: (1) at least about 85% combined MLM, MML, LLM and LML triglycerides; and (2) up to about 15% combined MMM and LLL triglycerides, and wherein said fatty acid composition of the reduced calorie triglycerides comprises: (1) from about 10 to about 70% C6 to C10 saturated fatty acids, (2) from about 30 to about 90% C18 to C24 saturated fatty acids; and (3) from about 20% to about 80% C20 to C24 saturated fatty acids.
- 29. The composition of claim 28 wherein said polyol polyester is liquid at 98.6.degree. F. (37.degree. C.).
- 30. The composition of claim 29 wherein said polyol is sucrose.
- 31. The composition of claim 30 wherein each fatty acid group in said polyol polyester has from 8 to 22 carbon atoms.
- 32. The composition of claim 32 wherein the fatty acid groups in said polyol polyester are formed predominantly from the fatty acids of oleic acid, linoleic acid and mixtures thereof.
- 33. The composition of claim 29 wherein the reduced calorie triglycerides comprise at least about 90% combined MLM, MML, LLM, and LML triglycerides and up to about 10% combined MMM and LLL triglycerides.
- 34. The composition of claim 33 wherein the fatty acid composition of said reduced calorie triglycerides comprises from about 20 to about 60% C6 to C10 saturated fatty acids, from about 40 to about 80% C18 to C24 saturated fatty acids, and from about 30 to about 70% C20 to C24 saturated fatty acids.
- 35. The composition of claim 28 wherein said reduced calorie triglycerides comprise of least about 80% C38 to C42 triglycerides, from about 40 to about 50% C8 to C10 saturated fatty acids and from about 40 to about 60% behenic acid.
- 36. The composition of claim 35 wherein said reduced calorie triglycerides comprise at least about 80% C34 to C42 triglycerides, from about 40 to about 50% C8 to C10 saturated fatty acids and from about 40 to about 60% combined stearic and behenic acid.
- 37. The composition of claim 28 which further comprises from about 0.05 to about 0.2% of a calcium soap or magnesium soap of behenic acid or stearic acid.
- 38. A fat-containing food product having fat ingredients and nonfat ingredients wherein from about 10 to 100% of the total fat comprises the reduced calorie fat composition of claim 28.
- 39. The food product of claim 38 which is a firm chocolate-flavored product and wherein the reduced calorie fat composition comprises from about 65 to about 95% of a solid sucrose octaester having C.sub.12 to C.sub.14 fatty acid groups and from about 5 to about 35% of said reduced calorie triglycerides.
- 40. The chocolate-flavored product of claim 39 wherein the reduced calorie fat composition comprises from about 65 to about 95% of a sucrose octaester having at least about 90% myristic acid groups and from about 5 to about 35% of said reduced calorie triglycerides having at least about 80% C.sub.38 to C.sub.42 triglycerides, from about 40 to about 50% C.sub.8 to C.sub.10 saturated fatty acids and from about 40 to about 60% behenic acid.
- 41. The composition of claim 28 wherein the fatty acid composition of said reduced calorie triglycerides comprises no more than about 6% C.sub.18 unsaturated fatty acids.
- 42. A cooking, frying or salad oil wherein the fat ingredients comprise from about 50 to 100% of a reduced calorie fat composition which comprises:
- a. from about 65 to about 95% by weight of an edible, substantially nonabsorbable, substantially nondigestible polyol fatty acid polyester having at least 4 fatty acid ester groups, wherein said polyol is selected from the group consisting of sugars and sugar alcohols containing from 4 to 8 hydroxy groups and wherein each fatty acid group has from 2 to 24 carbon atoms; and
- b. from about 5 to about 35% reduced calorie triglycerides selected from the group consisting of MMM, MLM, MML, LLM, LML and LLL triglycerides, and mixtures thereof; wherein M is a saturated fatty acid residue selected from the group consisting of C6 to C10 saturated fatty acids, and mixtures thereof; wherein L is a saturated fatty acid residue selected from the group consisting of C.sub.20 to C.sub.24 saturated fatty acids; and mixtures of C.sub.18 to C.sub.24 saturated fatty acids, wherein said reduced calorie triglycerides comprise: (1) at least about 85% combined MLM, MML, LLM and LML triglycerides; and (2) up to about 15% combined MMM and LLL triglycerides, and wherein said fatty acid composition of the reduced calorie triglycerides comprises: (1) from about 10 to 70% C.sub.6 to C.sub.10 saturated fatty acids; (2) from about 30 to about 90% C.sub.18 to C.sub.24 saturated fatty acids; and (3) from about 20% to about 80% C.sub.20 to C.sub.24 saturated fatty acids;
- and from 0 to about 50% digestible triglyceride oil.
- 43. The cooking, frying or salad oil according to claim 42 which comprises from about 75 to 100% of a reduced calorie fat composition and from 0 to about 25% of a digestible triglyceride oil.
- 44. The frying oil of claim 42 wherein said polyol polyester is liquid at 98.6.degree. F. (37.degree. C.).
- 45. A salted snack which has been fried in the frying oil of claim 42.
- 46. The salted snack of claim 45 which is a french fry or potato chip.
- 47. A reduced calorie fat composition which comprises:
- a. from about 65 to about 95% by weight of an edible, substantially nonabsorbable, substantially nondigestible polyol fatty acid polyester having at least 4 fatty acid ester groups, wherein said polyol is selected from the group consisting of sugars and sugar alcohols containing from 4 to 8 hydroxy groups and wherein each fatty acid group has from 2 to 24 carbon atoms; and
- b. from about 5 to about 35% reduced calorie triglycerides selected from the group consisting of MMM, MLM, MML, LLM, LML and LLL triglycerides, and mixtures thereof; wherein M is a saturated fatty acids residue selected from the group consisting of C.sub.6 to C.sub.10 saturated fatty acids, and mixtures thereof; wherein L is a saturated fatty acid residue selected from the group consisting of C.sub.18 to C.sub.24 saturated fatty acids, and mixtures thereof; wherein said reduced calorie triglycerides comprise: (1) at least about 85% combined MLM, MML, LLM and LML triglycerides; and (2) up to about 15% combined MMM and LLL triglycerides, and wherein the fatty acid composition of the reduced calorie triglycerides comprises: (1) from about 10 to about 70% C.sub.6 to C.sub.10 saturated fatty acids; (2) from about 30 to about 90% C.sub.18 to C.sub.24 saturated fatty acids; and (3) no more than about 6% C.sub.18 unsaturated fatty acids.
- 48. The composition of claim 47 wherein the fatty acid composition of said reduced calorie triglycerides comprises from about 10 to about 30% stearic acid.
- 49. The composition of claim 47 wherein said reduced calorie triglycerides comprise at least about 80% C.sub.34 to C.sub.38 triglycerides, from about 40 to about 50% C.sub.8 to C.sub.10 saturated fatty acids and from about 35 to about 50% stearic acid.
