Claims
- 1. A food formulation containing a starch-based texturizing agent derived from high amylose starch producible by pregelatinizing the starch under aqueous acid conditions for a temperature, pressure and time sufficient to substantially disrupt starch granules and then causing the starch to retrograde to yield the starch-based texturizing agent, wherein said texturizing agent is essentially crystalline in structure.
- 2. The food formulation of claim 1 wherein the high amylose starch is derived from corn, barley, oats or peas.
- 3. The food formulation of claim 1 wherein the starch-based texturizing agent further comprises excipients, flavors, colors and combinations thereof.
- 4. The food formulation of claim 1 wherein the excipient is maltodextrin.
- 5. The food formulation of claim 1 wherein the food is selected from the group consisting of mayonnaise, salad dressing, cheese cake, mousse, sour cream, meat products, yogurt, cottage cheese dressing, ice cream, frozen dessert, cream cheese, processed cheese, topping, whipped cream and sauces, cake frosting, peanut butter spread, confection, non-dairy creamer, cheese-based sauce, cultured dairy product, baked foods, cold processed foods, cream based sauces, savory sauces, noncultured dairy products and retorted formulation.
- 6. The food formulation of claim 1 that contains a reduced fat content compared to its full fat counterpart.
- 7. The food formulation of claim 1 that is fat free.
- 8. A food formulation containing a starch-based texturizing agent derived from high amylose starch that has been pregelatinized under aqueous acid conditions for a temperature, pressure and time sufficient to substantially disrupt starch granules, wherein said texturizing agent is non-retrograded and essentially non-crystalline in structure.
- 9. The food formulation of claim 8 wherein the high amylose starch is derived from corn, barley, oats or peas.
- 10. The food formulation of claim 8 wherein the starch-based texturizing agent further comprises excipients, flavors, colors and combinations thereof.
- 11. The food formulation of claim 8 wherein the excipient is maltodextrin.
- 12. The food formulation of claim 8 wherein the food is selected from the group consisting of mayonnaise, salad dressing, cheese cake, mousse, sour cream, meat products, yogurt, cottage cheese dressing, ice cream, frozen dessert, cream cheese, processed cheese, topping, whipped cream and sauces, cake frosting, peanut butter spread, confection, non-dairy creamer, cheese-based sauce, cultured dairy product, baked foods, cold processed foods, cream based sauces, savory sauces, noncultured dairy products and retorted formulation.
- 13. The food formulation of claim 8 that contains a reduced fat content compared to its full fat counterpart.
- 14. The food formulation of claim 8 that is fat free.
- 15. A food formulation containing a starch-based texturizing agent derived from high amylose starch productive by pregelatinizing the starch under aqueous acid conditions for a temperature, pressure and time sufficient to substantially disrupt starch granules and then causing the starch to partially retrograde to yield the starch-based texturizing agent, wherein said texturizing agent is partially crystalline in structure.
- 16. The food formulation of claim 15 wherein the high amylose starch is derived from corn, barley, oats or peas.
- 17. The food formulation of claim 15 wherein the starch-based texturizing agent further comprises excipients, flavors, colors and combinations thereof.
- 18. The food formulation of claim 15 wherein the excipient is maltodextrin.
- 19. The food formulation of claim 15 wherein the food is selected from the group consisting of mayonnaise, salad dressing, cheese cake, mousse, sour cream, meat products, yogurt, cottage cheese dressing, ice cream, frozen dessert, cream cheese, processed cheese, topping, whipped cream and sauces, cake frostings, peanut butter spread, confection, non-dairy creamer, cheese-based sauce, cultured dairy product, baked foods, cold processed foods, cream based sauces, savory sauces, noncultured dairy products and retorted formulation.
- 20. The food formulation of claim 15 that contains a reduced fat content compared to its full fat counterpart.
- 21. The food formulation of claim 15 that is fat free.
- 22. A food formulation containing a starch-based texturizing agent derived from high amylose starch that has been pregelatinized under aqueous acid conditions for a temperature, pressure and time sufficient to substantially disrupt starch granules, wherein said texturizing agent is retrograded and essentially crystalline in structure and further comprises maltodextrin.
- 23. The food formulation of claim 22 wherein the food is selected from the group consisting of mayonnaise, salad dressing, cheese cake, mousse, sour cream, meat products, yogurt, cottage cheese dressing, ice cream, frozen dessert, cream cheese, processed cheese, topping, whipped cream and sauces, cake frosting, peanut butter spread, confection, non-dairy creamer, cheese-based sauce, cultured dairy product, baked foods, cold processed foods, cream based sauces, savory sauces, nonculture dairy products and retorted formulation.
- 24. A food formulation containing a starch-based texturizing agent derived from high amylose starch that has been pregelatinized under aqueous acid conditions for a temperature, pressure and time sufficient to substantially disrupt starch granules, wherein said texturizing agent is non-retrograded and essentially non-crystalline in structure and further comprises maltodextrin.
- 25. The food formulation of claim 24 wherein the food is selected from the group consisting of mayonnaise, salad dressing, cheese cake, mousse, sour cream, meat products, yogurt, cottage cheese dressing, ice cream, frozen dessert, cream cheese, processed cheese, topping, whipped cream and sauces, cake frosting, peanut butter spread, confection, non-dairy creamer, cheese-based sauce, cultured dairy product, baked foods, cold processed foods, cream based sauces, savory sauces, noncultured dairy products and retorted formulation.
- 26. A food formulation containing a starch-based texturizing agent derived from high amylose starch that has been pregelatinized under aqueous acid conditions for a temperature, pressure and time sufficient to substantially disrupt starch granules, wherein said texturizing agent is partially retrograded and partially crystalline in structure and further comprises maltodextrin.
- 27. The food formulation of claim 26 wherein the food is selected from the group consisting of mayonnaise, salad dressing, cheese cake, mousse, sour cream, meat products, yogurt, cottage cheese dressing, ice cream, frozen dessert, cream cheese, processed cheese, topping, whipped cream and sauces, cake frosting, peanut butter spread, confection, non-dairy creamer, cheese-based sauce, cultured dairy product, baked foods, cold processed foods, cream based sauces, savory sauces, noncultured dairy products and retorted formulation.
