Claims
- 1. A full waxy wheat flour or starch characterized in that its amylose content is about 0%±about 1%.
- 2. A hydrolysis substrate containing a flour or starch according to claim 1.
- 3. A fermentation substrate containing a flour or starch according to claim 1.
- 4. A non-food product selected from the group consisting of cosmetics, glues and paint containing a flour or starch according to claim 1.
- 5. A food product selected from the group consisting of a biscuit, pork butchery products, animal feed, a sauce or cooked dish and a dairy product containing flour or starch according to claim 1.
- 6. A medium for culturing micro organisms containing starch and/or flour according to claim 1.
- 7. A process for preparing a functional full waxy wheat flour comprising:
preparing an initial flour with a defined size grading starting from full waxy wheat grains; and subjecting said flour to a heat-moisture treatment including adding water or steam and heat energy to achieve a degree of gelatinisation of starch between about 15 and about 99% for less than about 5 minutes.
- 8. A flour obtained by the process according to claim 7.
- 9. A process for preparing an improved full waxy wheat starch comprising:
extracting starch from full waxy wheat grains; and subjecting the starch to a heat-moisture treatment including adding water or steam and heat energy to obtain a degree of gelatinisation of the starch of between about 15 and about 99%.
- 10. A starch obtained by the process according to claim 9.
- 11. A food product containing a starch according to claim 10.
- 12. A food product containing a flour according to claim 8.
- 13. A non-food product containing a flour according to claim 8.
- 14. A non-food product containing a starch according to claim 10.
- 15. Products selected from the group consisting of snacks and extruded items, biscuits, components for making bread, croissants and buns, pork butchery items, animal feed, sauces and cooked dishes, dairy items, batters, glues, paint and cosmetic products containing a flour according to claim 8.
- 16. Products selected from the group consisting of snacks and extruded items, biscuits, components for making bread, croissants and buns, pork butchery items, animal feed, sauces and cooked dishes, dairy items, batters, glues, paint and cosmetic products containing a starch according to claim 10.
- 17. A hydrolysis substrate containing a starch according to claim 10.
- 18. A fermentation substrate containing a flour according to claim 8.
- 19. A micro organism culture medium containing a flour according to claim 8.
- 20. A micro organism culture medium containing a starch according to claim 10.
