Claims
- 1. A process for producing a non-reducing saccharide or a saccharide composition containing a non-reducing saccharide, comprising:
- (a) introducing a microorganism capable of producing a non-reducing saccharide forming enzyme which produces a non-reducing saccharide comprising at least one trehalose molecule and at least one glucose molecule into a nutrient culture medium which contains at least one reducing partial starch hydrolysate with a glucose Polymerization degree of at least 3, and a nitrogen source in a sufficient amount for the growth of said microorganism;
- (b) culturing said microorganism under conditions of a temperature of more than 4.degree. C. but less than 40.degree. C. a pH of 4-10, and a dissolved oxygen concentration of 0.5-20 ppm to produce a non-reducing saccharide or a saccharide composition containing a non-reducing saccharide; and
- (c) collecting from the culture the non-reducing saccharide or a saccharide composition containing the non-reducing saccharide.
- 2. The process of claim 1, wherein said reducing partial starch hydrolysates are obtainable by subjecting a liquefied starch of DE lower than 15 to starch-debranching enzyme and/or cyclomaltodextrin glucanotransferase in or not in a culture medium.
- 3. The process of claim 1, wherein 3 w/v % or more of said reducing partial starch hydrolysate is incorporated in the nutrient culture medium.
- 4. The process of claim 1, wherein said microorganism is one of the genus Rhizobium, Arthrobacter, Brevibacterium, Flavobacterium, Micrococcus, Curtobacterium, Mycobacetrium or Terrabacter.
- 5. The process of claim 1, wherein said microorganism is capable of producing trehalose-releasing enzyme along with non-reducing saccharide-forming enzyme.
- 6. The process of claim 1, wherein the cultivation is conducted in batch, continuous or semicontinuous manner.
- 7. The process of claim 1, wherein the culture is further subjected to beta-amylase, glucoamylase or alpha-glucosidase.
- 8. The process of claim 1, wherein said non-reducing saccharide is one or more members selected from the group consisting of trehalose, a non-reducing saccharide which bears at its molecular end a trehalose structure and a non-reducing saccharide which bears within its molecule a trehalose structure.
- 9. A process for producing a food comprising:
- (a) conducting the process of claim 1 to obtain a non-reducing saccharide or a saccharide composition; and
- (b) incorporating either the non-reducing saccharide or the saccharide composition obtained by step (a) into a food material.
- 10. The process of claim 9 wherein said non-reducing saccharide is at least one member selected from the group consisting of trehalose, a non-reducing saccharide which bears at its molecular end a trehalose structure, and a non-reducing saccharide which bears within its molecule a trehalose structure.
- 11. The process of claim 9, wherein said non-reducing saccharide is crystalline trehalose hydrate or anhydrous crystalline trehalose.
- 12. A process for producing a cosmetic composition comprising:
- (a) conducting the process of claim 1 to obtain a non-reducing saccharide or saccharide composition; and
- (b) incorporating either the non-reducing saccharide or the saccharide composition obtained by step (a) into a cosmetically acceptable material.
- 13. The process of claim 12 wherein said non-reducing saccharide is a member selected from the group consisting of a non-reducing saccharide bearing at its molecular end a trehalose structure, a non-reducing saccharide bearing within its molecule a trehalose structure, and trehalose.
- 14. The process of claim 12, wherein said non-reducing saccharide is crystalline trehalose hydrate or anhydrous crystalline trehalose.
- 15. A process for producing a pharmaceutical composition comprising:
- (a) conducting the process of claim 1 to obtain a non-reducing saccharide or a saccharide composition; and
- (b) incorporating either the non-reducing saccharide or the saccharide composition obtained by step (a) into a pharmaceutically acceptable material.
- 16. The process of claim 15, wherein said non-reducing saccharide is a member selected from the group consisting of a non-reducing saccharide bearing at its molecular end a trehalose structure, a non-reducing saccharide bearing within its molecule a trehalose structure, and trehalose.
- 17. The process of claim 15, wherein said non-reducing saccharide is crystalline trehalose hydrate or anhydrous crystalline trehalose.
